This study aimed to explore two Algerian substrates that have not yet been well characterised at a national level. This work began first with the physico-chemical and phytochemical profiling of roasted coffee and its spent residue from an espresso machine. The second phase focused on an evaluation of the antioxidant and enzymatic activities of their various extracts/oils. On the other hand, the content of total phenolic is highly increased in coffee grounds.
On the other hand, the antioxidant activity CUPRAC method showed that the most powerful activity belonged to the extract and marc of coffee. However, neither of these substantes showed any effect against Alzheimer's disease. On the contrary, both oils were found to inhibit the enzymes responsible for the development of diabetes.
